Chilled Cherry Processsing:
Coffee is Placed in airtight steel tanks that are lined with jackets to enable the flow of cold water, this process cools the cherries without touching them. The lower temperatures of the fermentation allow microorganisms to develop in a controlled, consistent environment. This ensures the pH level reduces slowly. The controlled fermentation can last up to weeks at a time, maintaining an average temperature of 15º celsius throughout the entire process.
