This methodically executed black honey lot was produced by the dynamic duo Oscar and Francisca Chacon. This particular black honey lot demonstrates perfectly what a longer post-harvest drying and longer contact time between seed and fruit can do together in tandem to turn up that flavor dial. Being a blend of both Caturra and Catuai, the deep red/purple fruit sweetness of this coffee shows how the long, slow fermentation and drying of a honey can impart aspects of both a juicy natural and the clean cup clarity of a washed processed coffee to this profile at the same time. During the harvest, the sugar content of the cherries is continuously measured with a Brix to verify the degree of ripeness, and the hand-picking begins when the value reaches a predetermined objective (22°) only. Oscar believes the drying curve has a fundamental impact on the coffee flavor. At Las Lajas specialty coffee drying is therefore very slow and sought after, which means that production is necessarily limited. With this Black Honey: 100% mucilage is left on, the coffee is dried in a solar dryer for 17-25 days and turned once per day with the aim of obtaining a particularly intense, sweet and fruity aromatic profile.
